I am back with a monthly favourites and as usual its a little late, but before April ends I thought I would let you know what I have been loving throughout March. With Spring already here a lot of brands have been launching their new collections and there has been a few things I have loved from the new launches including a brow powder by Fleur de Force which has revolutionised my life. In this one I am also sharing my favourite book and tv show for the last couple of months as well as some fashion pieces which I have been loving. Today I thought I would share with you my top tips for meal planning. Meal time was always quite stressful for me, working long hours meant I didn’t have a lot of time to think about food and when meal time came round I never knew what to eat and a lot of the time I would have nothing at home, or atleast nothing that was ready to eat and that meant I ended up eating out quite a lot, and frankly quite a lot of unhealthy food.
Once I started working from home, about 2 years ago I decided this had to end, not only because I was spending so much money on eating out, I was also wasting food which I would never cook and I wasn’t really eating very healthy and thats when I started meal planning. This has really helped me eat a healthier more balanced diet as I can visually see if I am eating too much of one thing at a certain point or if I am eating out too much. It has also helped me save lots of money, waste less food and actually make meal time a lot less stressful.

Today I have something a little bit different, it is my first ‘What I Eat In A Day’. I love watching these so I thought you might like to have a peak into my kitchen and see the kind of healthy stuff I cook on a day to day basis. Cooking is actually something I love doing and although I am not great at following recipes, I love experimenting with food and making each dish my own. Meal planning is something I am also really into lately so at the begginging of the week I will usually plan my lunches and dinners for that week and shop accordingly. This has really helped me balance my diet out and ensure I eat a good variety of food.
In this video I run through some of my favourite dishes to eat on an everyday basis which are not only healthy and delicious, but also don’t take too long to get ready so are perfect for a busy school night. So I had a dinner party over the weekend and I was really having a struggle thinking what I would serve for dessert. I have never actually been much of a baker despite watching every season of ‘The Great British Bakeoff, which obviously really limits what you can prepare for dessert, but after digging around for recipes I came across an old favourite – chocolate mousse! This is quite a simple dessert, but if done right it can honestly be the most heavenly so I thought I would share my recipe given it came out pretty well, even if I say so myself!

Cooking has always been a passion and although I love elaborate dishes sometimes you just don’t have the time to be experimenting in the kitchen and you want to whip up something delicious and healthy very quickly.
